Chocolate Chip Walnut Banana Bread

This Banana Bread is light and fluffy, filled with chopped walnuts and sweet, gooey melted chocolate.

Bananas are so underrated. They’re a delicious snack on their own, or you can add them in smoothies, pancakes, and baked goods. I’ll admit, I’m not the greatest baker, but whenever I have a bunch of bananas that have sat out on the counter for a little too long and start to turn that spotted brownish black colour, I love to put them to good use in a loaf of this Chocolate Chip Walnut Banana Bread. It’s foolproof even for the most inexperienced bakers and it comes out perfect every time- light and fluffy, with the nuttiness of the walnuts and oozing with melty chocolate.

When it comes to banana bread, the riper the bananas the better. As bananas ripen, they get sweeter and less starchy. This makes them easier to mix into the batter and improves the texture of the loaf overall. You also want to make sure that you don’t over-mix the batter. Over-mixing can lead to a denser, chewier loaf. We want it to be moist, but light and fluffy at the same time.

If you don’t have a stand mixer you can use an electric mixer or mix by hand. Just remember to:

  1. Cream the butter and sugar
  2. Mix your wet ingredients
  3. Mix your dry ingredients
  4. Incorporate the wet ingredients into the dry ingredients.
  5. Bake!

Ingredients

  • ½ cup butter, softened
  • 3/4 cup granulated sugar
  • ¼ cup brown sugar
  • 3 large bananas, extra ripe
  • 2 large eggs
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • Pinch of salt
  • Pinch of cinnamon
  • 1 cup chocolate chips
  • ½ cup chopped walnuts

Directions

  1. Preheat oven to 350. Grease a 9×5 loaf pan and then line it with parchment paper.
  2. In a standmixer, beat the butter and sugar for 3-4 minutes at medium-high speed until light and fluffly.
  3. Add eggs, bananas, and vanilla extract and beat on medium speed to combine.
  4. In a large bowl whisk together flour, baking soda, brown sugar, cinnamon and salt.
  5. Set the mixer to low, and slowly add the dry ingredients to the wet ingredients. Mix until combined, but do not overmix.
  6. Fold in walnuts and ¾ of the chocolate chips with a spatula.
  7. Pour the batter into the loaf pan and top with the remaining chocolate chips.
  8. Bake for 55 minutes to an hour, or until a toothpick inserted in the loaf comes out clean. Remove from oven and let it cool before serving.
