Ham and Mortadella Baguette Sandwiches with Pesto

These sandwiches are the epitome of lazy gourmet. They remind me of a fancy, grown-up ham sandwich. Here are my 3 key factors to elevate your sandwich game:

  1. Use fresh bakery bread. Fresh bread is affordable, healthier (no preservatives), and it honestly tastes so much better.
  2. Try different spreads. Think pesto, spicy mustard, aioli’s, red pepper jelly, hummus, guac.
  3. Layer it well. Cheese on the bottom, then meat and then veggies. This way the bread doesn’t get soggy from the vegetables.

I love how quick and easy these are to whip up and the leftovers are great for when you’re on the go. They are so hearty and filling that a half sandwich with a side salad is usually enough for me. You can customize the ingredients based on your family’s preferences or what you have on hand.

Ham and Mortadella Baguette with Pesto

Ingredients

  • 2 small french baguettes
  • 4 slices mortadella
  • 6 slices ham
  • 4 slices mozarella
  • 2 tsp pesto
  • 2 tbsp sliced kalamata olives
  • 1/4 small onion, thinly sliced
  • 4 slices tomatos
  • salt and pepper to taste

Directions

  1. Slice Baguettes in half lengthwise. Spread bottom half with pesto and then layer 2 slices of mozzarella cheese, 2 slices mortadella, 3 slices ham, 2 slices tomatoes, onions and olives. Add salt and pepper to taste. Spread light mayonnaise on top half. Repeat for second sandwich.
  2. Bake at 375°F for 12-15 minutes until cheese is melted.

Per Serving (1/2 sandwich): 340 calories; 14 g fat; 29 g carbohydrates; 21 g protein; 33 mg cholesterol; 1262 mg sodium.
